A few nights ago I was looking in the refrigerator and freezer for things to make for dinner. I didn’t have a meal plan that night and was winging it. After moving a few packs of frozen veggies aside I found an old, very freezer burned, steak. Perfect. But after defrosting the meat was tough and brownish; how could I salvage the steak with what was in the pantry and avoid it being totally leather-like?
Marinated Beef and Onion Stir Fry
First I chopped up half of a white onion and 2 cloves of garlic, one large one small. I put those in a frying pan with a little bit of olive oil to sautée until they were translucent.
While that was cooking I cut the meat up into small pieces. It really needed some kind of marinade or sauce, so I took a recipe I normally use for salmon and adapted it.
The marinade was made by mixing:
1/4 cup honey,
2-3 tablespoons of low sodium soy sauce (3 large squirts),
2 tablespoons (two large squirts) lemon juice,
1 teaspoon Dijon mustard (one small squirt)
2 teaspoons (covered the top of the bowl) of cinnamon.
After mixing thoroughly the meat was added to soak while the onions finished cooking.
Finally I poured the meat and sauce into the pan with the onions and cooked it on Medium until the meat was fully cooked and the sauce had nearly all evaporated.
It isn’t a very pretty dish, but it tasted good!
I made some brown rice and steamed broccoli to go along with it and produced a very satisfying meal. The sauce that was left after reduction went really well with the rice, and the cinnamon gave it a unique little kick.

I asked Ryan what he thought and the report was “good enough to make again,” and I agreed.

I think I’ll be doing something like this for Gameboy in the near future. There are a few mystery meat packages in the back of the freezer.
